Cracking Coconuts
(12/24/17) Steve picked up a coconut on our walk the other day and it has been sitting on a piling waiting for someone to crack it open. The kids arrived and decided to tackle this chore and found 2 more to go with it. Lainey grabbed a hammer, screw driver and scraper tool from the lazarette (the storage room at the stern of the boat underneath the floor).
After getting through to the shell, Lainey drilled a hole to pour out the coconut water which was shaking around inside. She then broke the shell in to several pieces which revealed the white coconut meat. I peeled off the shell with a knife and then grated the coconut. We got about 3 cups from 1 coconut until I tired of the peeling process. The toughest part was getting off the shell closest to the meat.

It has become clear I would starve in a matter of days if I were to be marooned on a island. I admire the tenacity of the Poole family. Thanks for the blogs. Happy New Year to you all.
Luckily we had far more to eat other than coconut. I still haven’t used the coconut in a recipe. Steve doesn’t eat it and I don’t think I can eat a whole coconut cake if I make it. Maybe some macaroons? Glad you are enjoying the blog. Tell Jennifer I am still working on my crochet…
