Sea Spray Resort & Marina

(12/6/17)  Steve was eager to get out the new dinghy and take a test drive.   Ray & Susan joined us for a ride out to Sea Spray Resort and Marina on Elbow Cay.  We left about 11:45 to head out to lunch at Sea Spray.  Our friends Howard and Valarie-from Athens, Georgia – met us for lunch.  They had been at ABR earlier in the week but left for the Sea Spray Marina for a few days before heading further south.  We hope to meet up with them on their way back to the states.  

Our ride was bouncy, misty and salty.  The wind was just a little too high for a smooth ride but it wasn’t too bad. It took about 40 minutes to get there.  As we got to the dinghy dock, several other dinghys appeared out of nowhere and raced us to tie up and get a table.  Howard and Valarie joined us for some great boating conversation while we enjoyed our meals.  

 

 

 

 

 

 

 

 

 

 

 

 

Susan and I checked out the resort store and discovered some very pretty paintings by a local artist.  We did not find anything there we could not live without.

As I have mentioned, the Royal Marsh Harbor Yacht Club has a nightly gathering at 5:00 under our lighted tent.  It was our night to bring an appetizer to the cocktail hour.  I love to try out new recipes and we had a whole bunch of jalapeños.  I was hankering for Jalapeno Poppers, but knew I didn’t want to deep fry anything on the boat.  I saw a recipe online that I tampered with to come up with the recipe below.  It was very well received.  

Jalapeno Popper Dip

For the dip
  1. 4-6 jalapeno peppers, diced and seeded
  2. 8 oz cream cheese, softened
  3. 1 cup sour cream
  4. 1 tsp garlic powder
  5. 2 cups cheddar cheese, shredded
  6. 3/4 cup monterey jack cheese, shredded
For the topping
  1. 1 cup Panko break crumbs
  2. 4 TBS melted butter
  3. 1/4 cup parmesan cheese
  4. 1 TBS parsley
Instructions
  1. Mix all the ingredients for the dip in a medium mixing bow.
  2. Place in an 8x8 greased baking dish.
  3. Sprinkle Panko bread crumbs over the top of dip.
  4. Pour melted butter over the bread crumbs.
  5. Sprinkle with parmesan cheese and parsley.
  6. Bake in a preheated 350 oven until bubbly and lightly browned.
  7. Serve with crackers, tortilla chips or toasted bread.
