Summer Salad Time (and Izzy, of course)

We have been spending a great deal of time with Izzy as you can tell by my last few posts.  There are other things going on here but she is so much more interesting and she is so photogenic that it’s hard not to write about her.  Steve is working long hours and weekends on getting a building ready for a new tenant.  I am catching up on the yard work and my tennis game.  

One of the best parts of tennis in Georgia is the ALTA tennis season.  Even when I am not winning my tennis matches, I try to come up with winning recipes to share.   This layer salad was a big hit at a recent match.   

 
 

 

 

Layered Salad with Creamy Salsa Dressing

Ingredients
  1. Salad Ingredients
  2. 1 avocado, peeled and chopped
  3. 1 orange Bell pepper, chopped and seeded
  4. 1 can black beans, drained
  5. 3 cups cherry tomatoes, chopped
  6. 1 tbsp fresh Cilantro, chopped
  7. 3/4 cup canned corn, drained
  8. 1 red onion, medium, chopped
  9. 1/2 cup sliced green olives
  10. 1-2 heads Romaine lettuce, chopped into bite sized pieces
  11. Dressing Ingredients
  12. 1/2 cup greek yogurt
  13. 1/2 cup mild or medium salsa
  14. 1/2 tsp chili powder
  15. 1/4 tsp salt
  16. 1 tbsp apple cider vinegar
  17. 1 tbsp olive oil
  18. 2 tbsp mayonnaise
  19. 1 tbsp green onions
  20. 2 tbsp chopped fresh cilantro
For the Salad
  1. Cover the bottom of the bowl with a small amount of lettuce.
  2. Layer the the ingredients around the sides of a clear glass bowl
  3. Continue to add more lettuce to the center of the bowl as the layers get higher.
  4. Layer the bowl in this order black beans, red onions, green olives, corn, avocado, and bell pepper.
  5. Cover all the layers and lettuce with the chopped tomatoes
  6. Sprinkle tomatoes with cilantro
For the dressing
  1. Place all ingredients into a blender and puree.
  2. Serve the dressing on the side.
